Recipe: Simple Protein Pancakes

I love pancakes! But I also love PROTEIN pancakes, because they are a fun breakfast treat without the carb crash that may come with your conventional pancake blend.

Try out my staple protein pancake recipe (serves 2):

Wet ingredients

  • 1 tsp vanilla extract

  • 1 tbsp oil

  • 2 eggs (separated, egg whites whisked)

  • ¼ cup almond milk (unsweetened)

  • 1 tbsp honey  

Dry ingredients

  • 1/3 cup all-purpose flour or oat flour (for gluten free)

  • ¼ cup protein powder (I like to use vanilla or unflavoured whey)

  • ½ tsp baking powder

  • ¼ tsp baking soda

Directions

Combine all wet ingredients in a bowl, with the exception of the egg whites. In a separate bowl, mix together dry ingredients. Add the dry ingredients to the wet, and gently mix together. Fold in the egg whites.

Heat a greased skillet (using coconut oil, olive oil or butter), to medium high. Add 1/4 cup of batter at a time, and cook for about 30 seconds per side.

Recipe serves 2.

Get creative with your pancake toppings!

I love putting 1 square of 85% chocolate in between each pancake while still hot (so that it melts and becomes delicious!). You could also try topping your pancakes with berries (blueberries, sliced strawberries), yogurt, peanut butter, a bit of honey, banana, etc.
